The Genealogy of Sake

［Documentary］
A documentary focusing on the master sake brewers based in Noto Peninsula, Ishikawa Prefecture. A master sake brewer, known as ‘toji’ in Japanese, is the chief executive of sake production who protects the sake brewery tradition with the knowledge and experience they have accumulated for many years. The four main Noto toji pass down their techniques and ideologies of making sake to their successors.
